The fournos
The heart of the restaurant, our traditional wood-burning fournos (literally meaning oven) is fired up first thing in the morning and kept running all day. It's used to cook our delicious oven dishes ready for evening - chicken in sauce, lamb in sauce, gigantes, briam and many more - as well as our home baked bread that we serve with each meal.
It is kept hot for the evening when we use it to cook our unique cheese pie and freshly prepared pizzas and many other dishes. We also use the charcoal that is produced from the burning wood for our tender, succulent grills. You'll see us taking the glowing charcoal to the kitchen with a shovel as the orders come in! |
